
Asian Beef + Greens

Ingredients
- 900 g beef mince
- 2 cup rice cooked according to instructions
- 2 tbsp sesame oil
- 2 garlic cloves, minced
- 1 brown onion finely diced
- 2 cup broccoli cut into florets
- 1 cup green peas frozen
- 1 cup baby spinach
- 2 tbsp tamari or soy suace
- 1 tbsp fish sauce
- 1 tbsp rice malt syrup honey or maple syrup
- 1 tbsp cornstarch or tapioca starch (mixed with 2 tbsp water)
- 2 tbsp sesame seeds
Instructions
- Prepare rice according to instructions, if not cooked already and set aside.
- Warm a fry pan to a medium heat, add sesame oil. Once warmed, add onion and garlic and cook through.
- Add beef mince and cook til browned.
- Add tamari, fish sauce, and rice malt syrup. Mix well to combine.
- Add corn starch / water mixture and stir through. Keep on heat until the 'sauce' starts to thicken.
- Add broccoli and green peas and stir til cooked through.
- Add spinach and stir through, til it wilts.
- To serve, add 1/3 cup rice to each bowl, serve of beef mixture and sprinkle with sesame seeds.
- Fresh chilli would be a yummy topping too (for big kids). Enjoy!
Notes
SUBS
If you wanted a change from rice, you could sub with rice noodles (delicious!). Just prepare according to packet instructions and follow all other steps.
You could sub beef with chicken or pork mince – both of these are delicious too.Â
STORAGE
The beef & veg can be made in advance and frozen (up to 3 months) or kept in the fridge (3 – 5 days). Â
