Bacon & Egg Muffin Cups w Greens

This is a family fave – enjoyed by big and little. We use this recipe for a yummy high protein breakfast or lunch and can be a great meal-prep idea. A great grab and go when days are busy!

Ingredients
  

  • 3 eggs
  • 3 rashers bacon
  • 1/2 handful baby spinach leaves
  • 1 tbsp milk of choice
  • 1 tbsp cottage cheese
  • 1/2 cup mixed fresh greens to serve
  • sea salt & pepper to season

Instructions
 

  • Pre heat oven to 180 degrees C.
  • Grease 2 – 3 holes in a muffin tray.
  • Whisk up eggs, milk and cottage cheese in a bowl.
  • Add finely sliced spinach and season with sea salt & pepper.
  • Line the hole with bacon and then fill each hole with a portion of the egg mixture.
  • Pop into your pre-heated oven and cook until egg mixture reaches desired consistency.
  • Carefully take egg cups out of the muffin tray on to your plate, serve with your greens and some salt and pepper and enjoy!

Notes

Can also add extras – cheddar cheese, feta cheese, tomatoes, capsicum or fresh herbs. You can also replace bacon, with ham, mince, sausage etc.
Serve with mixed greens on the side drizzled with ACV or lemon juice & sea salt. Coming in at around 22g or protein, we would also have a SSH protein shake or bowl of natural yoghurt to bump us up over 30g of protein.
CARBS
This recipe is a little light on complex carbs, so add a piece of sourdough if you need the extra nutrition or you have a med to high training load. 
PREP
This is a great pre-prepped meal too, if you whip up a batch and grab and go when things get busy!
