No Fuss Chicken & Vegetable Pie
A delicious warming dinner – real comfort food. Another one to add to your repertoire of healthy family food! We normally serve ours with a big, crunchy salad. This is bound to be a winner – after all, who doesn't love a bit of pastry?!
Ingredients
- 2 tbsp butter
- 1 onion diced
- 1 clove garlic crushed
- 1 tbsp flour of choice
- 1 cup broccoli
- 1 cup green peas
- 1/2 cup mushrooms chopped
- 1/2 cup carrot diced
- 600 gram chicken breast cubed (free range/ organic)
- 1 sheet puff pastry
- 1 eggs gently beaten
- 1 tbsp sesame seeds
White sauce
- 1/2 cauliflower roughly, chopped
- 1 tbsp butter
- 1/2 cup chicken stock
- sea salt & pepper to taste
Instructions
- Pre heat oven to 200 degrees C.
- Add 1 tbsp butter to medium-heat fry pan and gently fry onion and garlic, until softened.
- Add flour and stir through, coating the onion & garlic.
- Add chicken and combine well.
- Once chicken is cooked through, then add all vegetables (except cauliflower) and pan fry for 2-3 mins.
- Turn off heat and leave to rest.
White Sauce
- Steam cauliflower and transfer to blender with 1 tbsp butter and stock, and puree.
- Stir through the chicken and vegetables and season the filling with salt & pepper, to taste.
- Transfer filling to a baking dish and once the filling has cooled, top with the sheet of puff pastry.
- Baste the pastry with beaten egg, and sprinkle with sesame seeds (optional).
- Pop into the pre heated oven and cook until pastry is puffed and lightly browned – approx 20-25 mins (keep an eye on it).
- Enjoy.
Notes
SUBS
As a note, you could substitute the chicken for fish (tuna is delicious in this dish) or if you wanted to make the dish vegetarian, substitute the chicken for white beans (keep in mind that the protein hit will just drop a bit, if you do this).
You could also use any combo of vegetables including: broccoli, green peas, green beans, carrot, red capsicum, mushrooms, corn (totaling 2-3 cups).
Aim to find puff pastry with as few ingredients (and numbers) as possible. Ideally an ingredient list as close to just flour and butter, as possible.
