Greek Salad
Ingredients
- 300 g mixed fresh greens
- 250 g cherry tomatoes punnet, sliced
- 2 lebanese cucumber sliced in halves lengthways and then diced
- 1 small red onion finely diced
- 1 cup fresh parsley diced
- 100 g pitted olives sliced
- 100 g feta cheese
- 1/2 lemon juiced
Instructions
- Using a large salad bowl, layer all the lettuce, tomatoes, cucumber and onion and mix loosely together.
- Spread the olives, crumble the feta over the top and add the parsley.
- Squeeze over the lemon juice and mix through.
