Ingredients
  

  • 300 g mixed fresh greens
  • 250 g cherry tomatoes punnet, sliced
  • 2 lebanese cucumber sliced in halves lengthways and then diced
  • 1 small red onion finely diced
  • 1 cup fresh parsley diced
  • 100 g pitted olives sliced
  • 100 g feta cheese
  • 1/2 lemon juiced

Instructions
 

  • Using a large salad bowl, layer all the lettuce, tomatoes, cucumber and onion and mix loosely together.
  • Spread the olives, crumble the feta over the top and add the parsley.
  • Squeeze over the lemon juice and mix through.
