Grilled Chicken Strips w Slaw + Smashed Potatoes
This is a popular Sunday night meal in our household. Everyone loves the combo of flavour, colour and texture – juicy chicken strips, crunchy salad and moreish smashed potatoes!
Ingredients
- 600 grams chicken breast sliced
- 4 white potatoes skin on
- 2 tbsp olive oil
- 2 tbsp Mingle seasoning blend from Coles/Woolworths
- 2 tsp olive oil
- 1 cup red cabbage finely sliced
- 1 Lebanese cucumber diced
- 1 carrot grated
- 1 red capsicum diced
- 1 tbsp sesame seeds
- 1 tbsp apple cider vinegar
- 1 tbsp natural yoghurt
- sea salt & pepper to taste
- fresh mint leaves (optional, chopped to garnish)
Instructions
- Pre-heat oven to 200 degrees celsius. Scrub potatoes clean (if necessary) and slice them in half lengthways. Pop them in a boiling pot of water with skin on and par boil for 10 minutes. Remove and strain, then place on to a lined baking tray, smash them flat with a potato masher, drizzle with olive oil and lots of salt & pepper. Pop them in to a pre-heated oven until they are browned and crispy – approx. 10 minutes.
- While potatoes are cooking, slice chicken in to desired stripe size, cover well with a tbsp of olive oil and 2 tbsp of Mingle (or homemade spice) seasoning.
- In a medium pan, add olive oil and then pan fry chicken breasts. Cook both sides, until chicken is cooked through.
- In a large bowl combine cabbage, carrot, cucumber and capsicum together – this is your slaw mix. Save time by buying a pre packed Slaw Kit from Coles/Woolworths.
- Drizzle with 1 tsp olive oil, yoghurt, tbsp of apple cider vinegar, salt and pepper and combine well. Top with sesame seeds and fresh mint & coriander (optional). Split between four plates/bowls.
- Remove smashed potatoes from oven and divide among 4 plates.
- Top with grilled chicken strips, fresh herbs (as desired) and season with salt and pepper if required.
