One Pan Egg and Veggie Fry Up

Ingredients
  

  • 3 eggs
  • 1 tbsp olive oil extra virgin
  • 1 clove garlic minced
  • 1 cup baby spinach leaves
  • 1/2 cup mushrooms chopped
  • 1/2 zucchini chopped
  • 1/4 head broccoli chopped
  • 1/2 carrot chopped
  • ¼ cup fresh parsley

Instructions
 

  • Heat up your non-stick pan and add the olive oil. Then quickly fry off your garlic and add your veggies and spinach.
  • Stir Fry these for a minute or until you can see the colour start to change.
  • Spread them out evenly on the pan and crack your eggs over the top of the veggies as if your frying them.
  • Let this cook for minute or two and then start to flip it over with a spatula or egg flip. Do this until the eggs are cooked through and remove the egg and veggie mix from the pan and place it on a plate.
  • You can season this with salt and pepper and eat it as is – or add some Tamari and Sriracha sauce to really spice things up.

Notes

This meal is a bit light in the complex carb area – so if you’re feeling you need the extra carbs, please add ¼ cup cooked rice or 1 x piece of sourdough toast on the side.
