Pork Mince + Veggie Fried Rice

This is a weekly go-to 'clean the crisper', throw it all in type family meal – that everyone loves!
This recipe serves a family of 4, but if you have hungry teenagers in the house, maybe serve a little extra rice in their bowl or throw in a cup or two of extra non-starchy veggies to your mix – i.e chopped capsicum, mushroom or green beans.

Ingredients
  

  • 500 grams pork mince (free range)
  • 1 tsp sesame oil
  • 1 cup rice pre-cooked
  • 1 onion finely diced
  • 2 cloves garlic finely diced
  • 2 carrot diced
  • 1 head broccoli chopped into florets
  • 2 cobs corn kernels removed (or use frozen)
  • 1 cup frozen peas
  • 1/4 red cabbage chopped
  • 2 tbsp tamari sauce more to season if required
  • 1/2 lime juiced
  • sea salt & pepper to season/ taste
  • serve with fresh coriander and sesame seeds optional

Instructions
 

  • If you haven't done so already, cook the rice according to packet instructions (absorption method on stove top or rice cooker). This recipe requires 1 cup of cooked rice, so you can freeze any leftovers.
  • Finely dice the onion and garlic and chop and dice all remaining vegetables, and set aside.
  • In a wok or large fry pan, cook the pork mince until browned and cooked through. Remove from wok and pop aside.
  • Cook onion and garlic in same pan for 3-5 minutes until soft, then add remaining veggies. Cook all veggies for the next 5 minutes or so until just starting to soften.
  • Add 1 cup of cooked rice and pre-cooked pork mince and stir through.
  • Stir through tamari sauce, lime juice and season with extra salt and pepper as required.
  • Serve in to bowls and top with fresh coriander or sesame seeds if desired. Enjoy!

Notes

SUBS
You can use beef or chicken mince instead of pork, as desired.
Time Saver Tip:
Instead of chopping up all your veggies, grab a bag of your favourite frozen chopped veg combo from Coles/Woolworths. Frozen works just as well and definitely saves on time!
