Ingredients
  

  • 1 slice sourdough or gluten free alternative
  • 150 g cottage cheese
  • 100 g smoked salmon
  • 1/2 cucumber sliced
  • 1 handful mixed fresh greens to serve
  • sea salt & pepper to season
  • lemon juice to season

Instructions
 

  • Toast sourdough bread.
  • Top toast with cottage cheese, cucumber slices and smoked salmon.
  • Season with fresh lemon juice, sea salt and pepper.
