SSH Secret Sauce (Veggie Loaded Passata)
The SSH Secret Sauce dish is a must-do, if you really want to cook smarter and not harder, then you need to get this gem into your meal-prep repertoire. This is one 'super sauce' that literally forms the base of sooo many different dishes. Packed with vegetable and red lentils, this sauce brings a tonne of nutrients and the all important fibre to any meal. Clever right? We honestly believe that the more you make of this, the better! You will use this baby soo many times – it is the perfect 'pantry staple' and can be transformed into so many super easy, yummy, dishes. With the addition of a few quick herbs you can transform this from an Italian pasta sauce, to a Mexican bean dish; as a spread on toasted sandwiches, to the base for Turkish meatballs and back to a scrumptious topper for your pizza base. Batch cook this, giving you at least 2-3 servings/meal additions – some for now and some for later.
Ingredients
- 2 tbs olive oil
- 1 diced brown onion
- 4 minced cloves garlic
- 2 diced stalks celery
- 2-3 diced carrot
- 2-3 cups roughly chopped mixed veg (you could use any / all of pumpkin, sweet potato, zucchini, capsicum, mushrooms)
- 1 cup red lentils rinsed
- 1 700ml tomato passata (passata is simply pure tomato puree)
- 1-2 pinch sea salt to taste
- 1-2 cup water
- 1 cup broth/stock optional
Instructions
- Heat oil up in a large pan or pot over medium heat.
- Reduce to low heat and sweat the onion, garlic, carrot and celery until the celery is transparent. This will take around 5-8 mins.
- Add all of the remaining ingredients and then turn the temperature to low and sauté, stirring every five mins or so to make sure the bottom doesn't stick.
- You can add the tomato passata and now and 1 – 1 1/2 cup water, depending on how thick you want the sauce.
- If you wanted to ‘supercharge’ this sauce even further, you might add 1 cup chicken broth, or 1 tsp of bone broth concentrate, some veggie stock/broth and / or 1 tbs nutritional yeast.
- Once cooked through and lentils are soft, transfer the whole lot to a high powered blender (blend up in batches if you need to).
- If the mixture is a bit thick, you can thin it out with broth or veggie stock if you like.
- We store ours in big glass jars or the original passata jars. If storing in the freezer, make sure you leave an inch or so at the top of the mixture (so glass doesn't break in freezer).
