Ingredients

  • 500 grams lean beef mince grass-fed where possible
  • 1 carrot grated
  • 1 tbsp dijon mustard
  • 1 tsp sea salt
  • 5 eggs fried (on top)
  • 5 slices sourdough or use wholemeal bread rolls or large lettuce leaves instead of bread)
  • 1 tomato sliced
  • 1 avocado sliced
  • 1/2 cos lettuce leaves removed
  • 1 cup cheese grated/sliced
  • pickles optional

Instructions

  • In a bowl place beef mince, grated carrot, mustard and salt.
  • Mix together well using hands and roll in to patties of desired size
  • If you have the time, pop these into the fridge to firm up a little bit or If there is not time, you can just cook from here.
  • Heat fry pan to medium heat. Cook patties in batches. Cook first side until blood begins to rise to the surface, then flip and cook on second side, until cooked through.
  • Set aside and repeat until all patties are cooked. Cover in foil while you assemble the remaining ingredients.
  • Now you can fry up your eggs on he same pan. We love ours a little gooey in the centre.
  • Slice the tomato and avocado and pull the lettuce apart. Prepare sourdough pieces (toasted or fresh) and assemble burger as desired, pop your fried egg on top ( a little gooey is best!) top with a sprinkle of grated cheese and pickles for that extra bit of umami!
  • If you're not feeling up for a burger, serve your burger patty with a yummy side salad or veggies – options are endless!

Notes

BATCH
You can sub another meat mince source (chicken, lamb or pork) using our protein conversation chart.
Patties can be cooked and kept in fridge (up to 3 days) or in freezer (up to 3 months).  Only assemble when ready to eat.  Once assembled, it won’t keep well.
Double the batch, make up your patties and freeze half uncooked for another night – cook once, enjoy twice!
