Fried Egg, Cottage Cheese & Avo Muffins

Here is our go-to eggs and avo on toast with an English muffin to mix things up. A little more 'pimped' than the standard with the addition of cottage cheese – bringing this yummy breakie closer to 25 grams of protein!

Ingredients
  

  • 1 english muffin
  • 1 tsp olive oil or butter
  • 2 eggs
  • 4 tbsp cottage cheese
  • 1/4 avocado

Instructions
 

  • Halve the English muffin and pop it in the toaster.
  • Heat your EVOO or butter in a pan, then fry your eggs to your liking.
  • Remove toast and eggs and set them aside.
  • Spread the avocado evenly between two english muffins, top with cottage cheese and lastly your fried eggs. Season with S&P as desired. Enjoy!
