
Fried Egg, Cottage Cheese & Avo Muffins
Anna + EmHere is our go-to eggs and avo on toast with an English muffin to mix things up. A little more 'pimped' than the standard with the addition of cottage cheese – bringing this yummy breakie closer to 25 grams of protein!

Ingredients
- 1 english muffin
- 1 tsp olive oil or butter
- 2 eggs
- 4 tbsp cottage cheese
- 1/4 avocado
Instructions
- Halve the English muffin and pop it in the toaster.
- Heat your EVOO or butter in a pan, then fry your eggs to your liking.
- Remove toast and eggs and set them aside.
- Spread the avocado evenly between two english muffins, top with cottage cheese and lastly your fried eggs. Season with S&P as desired. Enjoy!
