Breakfast Burrito – yes please! This is also an epic, quick lunch – with a little Mexican twist – a real winner.

Ingredients
  

  • 1 whole wheat tortilla
  • 1 egg
  • 2 egg whites
  • 1/4 cup black beans rinsed
  • 1/4 cup salsa
  • 1/4 cup shredded cheese
  • 1 handful baby spinach leaves

Instructions
 

  • Scramble egg and egg whites in a pan over medium heat.
  • Warm the tortilla in the microwave or a pan.
  • Fill the tortilla with scrambled eggs, black beans, salsa, spinach and cheese.
  • Roll up and serve.

Notes

Feel free to add your herbs and spices of choice in your eggs to boost the flavour!
