Ingredients
- 1 whole wheat tortilla
- 1 egg
- 2 egg whites
- 1/4 cup black beans rinsed
- 1/4 cup salsa
- 1/4 cup shredded cheese
- 1 handful baby spinach leaves
Instructions
- Scramble egg and egg whites in a pan over medium heat.
- Warm the tortilla in the microwave or a pan.
- Fill the tortilla with scrambled eggs, black beans, salsa, spinach and cheese.
- Roll up and serve.
Notes
Feel free to add your herbs and spices of choice in your eggs to boost the flavour!
