This combo of bitter & zesty greens and vegetables is perfect for getting (digestive) juices flowing – enjoy on its own or pair it with meat to aid digestion.

Ingredients
  

  • 2 cups rocket or watercress
  • 2 fennel bulbs thinly sliced,
  • 1 cup fresh mint leaves
  • 1/2 red onion thinly sliced,
  • 4 radishes thinly sliced,
  • 1 green apple thinly sliced.

Instructions
 

  • Combine all of the ingredients in a large bowl.
  • Stir through a zesty salad dressing – try lemon, parsley and tahini dressing OR Supergreen powerhouse dressing.
  • Enjoy!

Notes

This salad is perfect served with meaty dishes like steak or slow cooked lamb – the bitter leafy veges get the gastric juices flowing, which helps digestion.
